Crispy Creamy Chicken and Cheese Rolls
These crispy creamy chicken and cheese rolls are the kind of snack that disappears the moment it hits the table. Golden and crunchy on the outside, with a creamy, cheesy chicken filling inside — they are seriously moreish.
The filling comes together in one pan in about ten minutes, and because the rolls are wrapped in spring roll wrappers there is no pastry to make. I like to make a big batch and keep them in the freezer for when the kids get hungry or when friends drop by.

Ingredients
300g chicken breasts- cubed
2 tablespoons oil
4 green onion stalks- chopped
1 teaspoon garlic paste
1 teaspoon paprika
1 teaspoon salt
1 teaspoon oregano
1 teaspoon cumin powder
1 teaspoon chilli flakes
½ teaspoon black pepper
1 tablespoon flour
120ml/ ½ cup milk
60ml cream
1/4 cup chicken stock
1 cup mixed vegetables
2 cups shredded cheese
Spring roll wrappers
Egg- beaten- for sealing and coating
Breadcrumbs- for coating
Oil- for frying
Instructions
Heat the oil in a pan and add the chopped green onions. Saute for 30 seconds. Add the chicken and spices and cook until the chicken is cooked through. Add the vegetables and sauté for 1 minute.
Add the flour and cook for 1 minute.
Add the milk, cream and chicken stock. Mix well and cook until the mixture is creamy and thickened.
Turn off the heat and allow the filling to cool completely.
Once the mixture has cooled, mix in the shredded cheese.
Place a spring roll wrapper on your work surface and add 1–2 tablespoons of the chicken filling.
Fold and roll the wrapper around the filling. Brush the edges with beaten egg to seal the roll closed.
Dip or brush the outside of each roll with the beaten egg, then coat well in breadcrumbs.
Shallow fry for 3-4 minutes until golden brown and crisp on the outside.
Serve them while they are hot and crisp, with a ketchup or a sweet chilli sauce on the side.
