I love recipes like this because they remind me that homemade doesn't have to mean complicated. There’s something so satisfying about taking a few simple ingredients and turning them into something that looks and tastes like it came from your favourite restaurant. These Chicken Cheese Fingers are crispy on the outside, juicy on the inside, and packed with cheesy, herby flavour in every bite.

One of my favourite things about this recipe is that it's freezer-friendly. I always feel a little more organised when I have a batch tucked away in the freezer, ready for those busy evenings when everyone wants something quick but homemade. Just fry them straight from frozen and you've got a delicious snack, lunch, or easy dinner in minutes.

Serve them with your favourite dipping sauce, alongside chips, or pop them into lunchboxes for a treat everyone will love. Once you make these from scratch, I have a feeling they'll become a regular in your kitchen too.

Chicken Cheese Fingers

Preparation Time 20 minutes

Cook Time 5 minutes

Yields 18 fingers

Ingredients

250 grams chicken breasts

1 teaspoon paprika

1 teaspoon oregano

1 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon salt

1 cup cheese- grated

1 tablespoon cajun seasoning

1/2 teaspoon onion powder

1/2 teaspoon garlic paste

1/2 teaspoon ginger paste

1 cup flour

2 eggs- beaten

Bread crumbs- mixed with 1/4 teaspoon salt, 1/4 teaspoon oregano, 1/4 teaspoons paprika and 1/2 teaspoon black pepper

Oil- for shallow frying

Instructions

  1. Place the chicken in a food processor and make it into a fine paste. Remove it from the food processor and put it in a bowl. Add the paprika, oregano, black pepper, garlic powder, salt, cajun seasoning, onion powder, garlic paste, ginger paste and the cheese. Mix until properly combined.

  2. Grease your hands with oil and remove around 2 tablespoons  of the mixture. Make it into a ball, then roll it out into a finger shape. Coat it in flour, beaten egg and then the seasoned bread crumbs.

  3. Place the coated chicken fingers onto lined trays and freeze them now if you want to lose them at a later date. They can be stored in the freezer for up to a month.

  4. To fry, heat oil for deep frying to 180c. Fry the chicken cheese fingers for 2-3 minutes until golden and crispy.
