Lamb And Cheese Sausage Rolls

Ramadan is coming up so fast this year, and my prep work is so far behind that now I am rushing to make recipes, both for the channel to share with you and the bulk freeze prep work I do before the blessed month begins. Sometimes, the fast weighs heavy and you don’t feel like making an abundance of food all fresh. When those days hit, then I reach for dishes like these lamb and cheese sausage rolls from the freezer. I pop them in the oven and they are ready to serve in 20 minutes.
The best part about all these frozen snacks is that, just in case you have to add a few small things to break your fast, you can easily take out a few of each, bake them or air fry. Then you have a medley of snacks to serve. Thats why I love these quick freezer ideas.

Cook Time 20 minutes
Yields 15-16 mini sausage rolls
Ingredients
500 grams lamb mince
75 grams diced onions
1 teaspoon garlic paste
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon mixed herbs
1 teaspoon parsley
1 teaspoon all purpose seasoning
1 egg- beaten and divided
125 grams shredded cheese
Sesame seeds for topping
200 grams puff pastry- cut into squares
Instructions
Sauté onions in 1 tablespoon oil until translucent. Set them aside to cool completely.
In bowl, combine the mince and all the spices. Add the onion and mix it all in by hand.
Transfer to a food processor and blend until paste like.
Return the mixture to the bowl and add half the beaten egg and cheese. Mix well.
Place the mixture in the middle of the puff pastry sheets. Form the mince into a log shape over the puff pastry.
Seal with egg and fold the puff pastry into a cylinder shape.
Score and cut the puffs out.
Place on a lined baking tray. If you want to freeze them then now is the time. Place the tray in the freezer and once frozen solid move them to a ziplock bag.
Once ready to bake, you want to brush the puffs with the remaining egg and sprinkle over sesame seeds.
Bake at 180c for 15-20 minutes. If baking from frozen, brush with egg wash and bake at 180c for 20-25 minutes.
