Chicken and Cheese Lollipops

I’m always looking for lunchbox ideas for the kids and I will sometimes come up with recipes that I know the kids will definitely enjoy! I didn’t expect anyone to love these chicken and cheese lollipops as much as they did. They are so easy to make because all you have to do is throw everything into a food processor and grind the mixture until smooth. Wrap the chicken mixture around the cheese, cover in egg an breadcrumbs and then fry for 5-10 minutes until all golden brown and the cheese is oozy!

Makes 12


Ingredients

250 grams chicken breasts

1 teaspoon garlic paste

1 teaspoon salt

1 teaspoon red chilli flakes

1/2 teaspoon black pepper

1 teaspoon lemon juice

1/2 onion

Handful of fresh coriander

1 tablespoon soya sauce

1 egg

2 slices bread

2 tablespoons corn starch

200 grams cheese- cut into 12 chunks

2 eggs- beaten

2 cups breadcrumbs


Oil for shallow frying









Instructions

  1. Combine the chicken breasts, garlic, salt, red chilli flakes, black pepper, lemon juice, onion, coriander, soya sauce, egg and bread in the food processor. Grind until a smooth paste.

  2. Add the corn starch and grind down once again.

  3. Cut the cheese into chunks. Insert the cheese onto the wooden lolly sticks. Grab a handful of the chicken mixture and wrap it around the cheese. Shape into drumstick shapes. Set them aside. Continue with the rest of the mixture.

  4. Cover in egg and breadcrumbs.

  5. Freeze the chicken lollipops for 5-10 minutes before we fry them

  6. To fry these: heat 1 inch oil to 170c. Place only 2-3 of the lollipops in the oil at once. Fry all sides for 5-10 minutes until evenly golden. Remove from the oil and blot on kitchen towel.

  7. Serve with your favourite sauce.
