Greek Chicken Souvlaki with Tzatziki

Souvlaki is the most popular Greek street food, consisting of skewered chicken and vegetables. The word 'souvlaki' literally means meat on skewers! The skewers of meat are cooked on an open grill, served with red onion, salad, tzatziki and soft pita bread.


It's really difficult to find the original pita bread used to make souvlaki, so I am sharing my recipe with you here. The bread is the perfect accompaniment, Soft and pillowy pita bread. And so easy to make, perfect for wrapping up that juicy chicken.






Preparation Time 45 minutes + 3 hour marination time

Cook Time 40 minutes

Serves 4


Chicken Marinade


2 lb chicken thighs/ 4 chicken breasts

4 tablespoons olive oil

1 1/2 teaspoon salt

1/2 teaspoon black pepper

2 teaspoons dried oregano

1 teaspoon dried mint

1 teaspoon cumin powder

1 teaspoon coriander powder

1 teaspoon paprika

1/2 teaspoon cinnamon powder

4 cloves garlic - minced

zest and juice of 1 lemon


Wraps


250 grams flour

7 grams instant yeast

1 teaspoon caster sugar

2 teaspoon olive oil

150 ml warm water (40-46c)







Tzatziki

4 tablespoons yogurt

¾ teaspoon dill

2 tablespoons mayonnaise

4 cloves garlic- minced

1 small cucumber- chopped (squeeze all the water out of it with a cheesecloth)

Salt- to taste








Instructions


  1. Prepare the Chicken and marinade. Cut the chicken into 2 inch pieces. Place them in a large bowl. Add the rest of the marinade ingredients. Stir to combine. Cover and refrigerate for 30-60 minutes.

  2. Prepare the tzatziki, by combining all the ingredients together and pouring the sauce into a bowl. Cover and refrigerate.

  3. Prepare the dough: Combine the warm water with the sugar and yeast. Let it bloom for 15 minutes. Add the yeast water to the flour and olive oil. Knead until a dough forms. Place the dough in a bowl. Cover and keep in a warm place for 1 hour, or until the dough has doubled in size.

  4. Place bamboo sticks in a bowl of water. Let them sit in the water for 30 minutes. This prevents the sticks from burning when you cook them on the grill.

  5. Thread the chicken onto the skewers. There should be around 3-4 pieces per bamboo stick.

  6. Preheat the grill on a high heat. Cook the souvlaki on a high heat for 8-10 minutes. Wait while cooking each side until grill marks appear.

  7. Make 6 balls out of the dough and roll out very thin. Cook them on a medium high flame until golden on each side and the wraps inflate. Cover them with a cloth to keep them warm.

  8. Serve with chicken souvlaki with fries, sliced tomatoes, sliced onions, tzatziki, hummus and the wraps.
