Crispy Honey Butter Chicken Burgers

You guys know how much we love a good burger in our house! And these Crispy Honey Butter Chicken Burgers were soooo good. There is just so much going on in one burger. You have the crispy chicken, the sweet and slightly spicy honey butter sauce, creamy slaw, pickles and then those crispy potato straws on top. So yum!


I wanted the chicken to have lots of flavour on its own, so I seasoned it with Cajun seasoning, paprika, garlic powder, salt and pepper before coating it in egg and seasoned flour. The seasoned flour makes such a difference because you don’t end up with a crispy coating that tastes of nothing. Once fried, the chicken is tossed into a buttery honey sauce with chilli flakes and Cajun seasoning. Sweet, salty, spicy and crispy all at once!


And I know making the potato straws seems like an extra step, but don’t skip them. They give the burgers that extra crunch and make them feel a little different from your usual homemade chicken burger. I used brioche buns because I love that slight sweetness with fried chicken, but you can use whatever burger buns you have at home. If you want the recipe for the brioche buns they are here.


These are definitely messy burgers, but that’s part of the fun! Serve them straight away while the chicken and potatoes are still crispy. And maybe keep some extra napkins nearby!



Crispy Honey Butter Chicken Burgers

Ingredients


Crispy Potato Straws

2 potatoes

Oil - for deep frying

Salt- to taste


Chicken

4 chicken fillets - flattened

2 tablespoons Cajun seasoning

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon paprika

1 teaspoon garlic powder

1 egg

Oil - for deep frying


Seasoned Flour

1 cup plain flour

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

½ teaspoon garlic powder



Honey Butter Sauce

2 tablespoons butter

2 tablespoons honey

½ teaspoon chilli flakes

½ teaspoon salt

1 teaspoon Cajun seasoning


Slaw

2 cups shredded cabbage

Mayonnaise

Sour Cream

Salt - to taste

Pepper - to taste

¼ teaspoon sugar

1 teaspoon vinegar


To Assemble

4 brioche burger buns

Sliced pickles

BBQ sauce




Instructions


  1. Start with the crispy potato straws. Cut the potatoes into very thin straws and place them in cold water. Leave them to soak, then drain and dry them really well.

  2. Heat the oil for deep frying. Fry the potato straws until crispy and golden. Remove them from the oil, season with a little salt and set aside.

  3. For the honey butter sauce, add the butter, honey, chilli flakes, salt and Cajun seasoning to a pan. Heat gently and mix everything together until the butter has melted. Set aside.

  4. Place the flattened chicken fillets in a bowl. Add the Cajun seasoning, salt, black pepper, paprika and garlic powder. Rub the seasonings all over the chicken so both sides are well coated.

  5. Prepare the seasoned flour by mixing the flour, salt, black pepper, paprika and garlic powder together in a shallow bowl.

  6. Beat the egg in another bowl. Dip each piece of chicken into the egg and then coat it really well in the seasoned flour. Press the flour onto the chicken to help create a nice crispy coating.

  7. Deep fry the chicken until golden, crispy and cooked all the way through. Remove from the oil and allow the excess oil to drain.

  8. Add the hot crispy chicken to the honey butter sauce and coat it on both sides or brush the sauce onto the chicken.

  9. To make the slaw, combine the ingredients and mix everything together.

  10. Slice and lightly toast the brioche buns.

  11. Now assemble the burgers. Add the slaw to the bottom bun followed by the crispy honey butter chicken. Add sliced pickles and a generous handful of crispy potato straws.

  12. Drizzle over some BBQ sauce, add the top brioche bun and serve straight away.



Tips

Make sure you dry the potato straws really well before putting them into the hot oil. This will help them get nice and crispy.

When coating the chicken, press the seasoned flour firmly onto it rather than just dipping it quickly. Those uneven little bits of flour are what give you that lovely crunchy coating once fried.

And assemble the burgers just before serving so you get that contrast between the soft brioche, creamy slaw and really crispy chicken and potatoes.
