Five Guy’s Copycat Double Bacon Cheeseburgers With Cajun Fries

I love making copycat recipes at home, where I can customise recipes to suit my family. You can’t do that at the restaurants, right? So when I was making these Five Guy’s Copycat Double Bacon Cheeseburgers, I quite literally set up a fast food counter to make these for the family. They really enjoyed the set up. They were able to pick their favourite toppings and the number of patties they wanted to add. It was heaven for my kids!

Serves 4
Ingredients
Cajun Fries
4 russet potatoes- washed unpeeled
1 tablespoon vinegar
Neutral oil
Salt- to taste
Cajun seasoning- to taste
Burgers
500 grams beef mince
Salt and pepper
Cheese Slices
Bacon
Burger Buns - recipe here
Toppings of choice: mayonnaise, lettuce, tomato, onions, caramelised onions, pickles, mushrooms, mustard, ketchup
Instructions
Divide the ground beef into 3.5 oz/ 100 gram balls.
Heat a heavy bottom pan over a high heat. Place the meat on a hot pan and smash it down with a burger press or a heavy spatula until very thin.
Cook that side for 1-2 minutes until a crust forms. Flip it over and then turn off the heat. Top with a slice of cheese and cover the pan with a lid to allow the cheese to melt. Remove from the pan and continue with the rest of the meat balls.
For the cajun fries: Cut the potatoes into 1/4 inch French fries. Keep the fries submerged in cold salted water to prevent them from browning.
Simmer the potatoes in salted, vinegar water for 10 minutes. Remove the fries with a slotted spoon not a colander. Passing them through a colander will break them.
Spread the fries over 2 tea towel lined trays. Allow them to steam dry for 5 minutes
Fry the fries at 200c for 1 minute. Remove the fries from the oil and cool the fries for 30 minutes. Then fry them again at 200c for 4 minutes until golden and crispy.
Finally toss the fries in the cajun seasoning and salt.
Assemble the burgers: Butter the sliced buns and toast them until golden. Spread over some mayonnaise, layer with the toppings of your choice like bacon, the burgers, tomatoes, pickles, lettuce, caramelised onions or even mushrooms. Add condiments like ketchup or mustard to your preference.
