I made these Ramadan Iftar boxes on the first day of Ramadan. I filled them with some of my most popular treats and snacks. And I got so many messages asking for the recipes for all the items in the box. I knew this would happen so I decided to include them in my Ramadan series this year. The first recipe to begin with this year is the Rainbow Pasta Salad. It is so easy to make even the kids love the bright and colourful vegetables. So make sure you at least try this recipe during this Ramadan month.Â
Preparation Time 25 minutesÂ
Serves 8Â
IngredientsÂ
300 grams dried rotini/ penne or spiral pastaÂ
100 grams deli meat- cubedÂ
2 chicken breasts- grilled and cubed
400 grams tomatoes- dicedÂ
1/2 cup green peppers- dicedÂ
1/2 cup red peppers- diced
1/2 cup yellow peppers- dicedÂ
1 small red onion- slicedÂ
1/4 cup black olives- drainedÂ
1/4 cup green olives- drainedÂ
Italian dressingÂ
3/4 cup olive oilÂ
1/3 cup vinegarÂ
1 clove garlic- mincedÂ
2 tablespoons honeyÂ
1/2 teaspoon saltÂ
1/2 teaspoon black pepperÂ
1/2 teaspoon oreganoÂ
InstructionsÂ
Boil pasta to al- dente then drain and allow to cool to room temperature.Â
Combine all the ingredients for the Italian dressing. Mix well and set aside.Â
Combine the pasta, deli meat, diced chicken, tomatoes, peppers, olives and onion in a large bowl. Add the dressing and toss everything together.Â
Chill the salad for 2-3 hours until ready to serve.Â
