When I go to someone’s house, I always take a dish with me. I never go empty handed. This potato salad with spring onions was such an easy dish to bring together, that everyone was surprised that it only took a few common ingredients to bring it together. Serves 4-6Â
IngredientsÂ
950 grams/ 2 lb potatoes- peeled and cut in 1 inch cubesÂ
5-6 spring onions -white and greens- choppedÂ
200 grams/ 1 cup mayonnaiseÂ
3 tablespoons mustardÂ
4-5 pickled mini cucumbers- choppedÂ
4 tablespoons coriander- choppedÂ
1 tablespoons chives- choppedÂ
1/2 teaspoon saltÂ
1/2 teaspoon black pepperÂ
InstructionsÂ
Cut and boil potatoes until softened. Drain and set aside to cool.Â
Once cooled, place the potatoes in a bowl. Set them aside.Â
Mix the mayonnaise, mustard, spring onions, mini cucumbers, coriander, chives, salt and pepper in a bowl.Â
Toss the potatoes in the dressing.Â
Chill for 3 hours before serving. Â
