Potato Salad With Spring Onions

When I go to someone’s house, I always take a dish with me. I never go empty handed. This potato salad with spring onions was such an easy dish to bring together, that everyone was surprised that it only took a few common ingredients to bring it together. Everyone should try this potato salad with spring onions. The freshness of the onions just brings life to this potato salad.

Preparation Time 10 minutes 

Cook Time 25 minutes 

Serves 4-6 


950 grams/ 2 lb potatoes- peeled and cut in 1 inch cubes 

5-6 spring onions -white and greens- chopped 

200 grams/ 1 cup mayonnaise 

3 tablespoons mustard 

4-5 pickled mini cucumbers- chopped 

4 tablespoons coriander- chopped 

1 tablespoons chives- chopped 

1/2 teaspoon salt 

1/2 teaspoon black pepper 


  1. Cut and boil potatoes until softened. Drain and set aside to cool. 

  2. Once cooled, place the potatoes in a bowl. Set them aside. 

  3. Mix the mayonnaise, mustard, spring onions, mini cucumbers, coriander, chives, salt and pepper in a bowl. 

  4. Toss the potatoes in the dressing. 

  5. Chill for 3 hours before serving.
