Creamy Corn Pasta Salad

I love sides! There is so much you can make, even with the bits and pieces left over bin your fridge. It’s a great way to use up what we have, to avoid wastage. This creamy corn pasta salad was perfect when I only had a couple cups of pasta left in the cupboard.

Creamy Corn Pasta Salad

Preparation Time 5 minutes

Cook Time 15 minutes

Serves 6


200 grams pasta- boiled to al dente

3 cups sweetcorn- boiled and cooled

Salt and pepper

1/2 cup green onion- chopped

1/2 onion- chopped

1/3 cup fresh coriander

1 cup shredded cheese


1/2 cup mayonnaise

1/3 cup sour cream

2 teaspoon lemon juice/ vinegar

1 teaspoon garlic powder

Salt and pepper


  1. Combine the ingredients for the dressing. Mix well

  2. Add the salad ingredients and fold them in.

  3. Adjust the seasoning.

  4. Chill for a few hours before serving.
