Pasta salads make a great side when entertaining guests. I'll make huge batches of both pasta salad and potato salad, and I have party guests take home the leftovers. They don't realise that I made the extra large portions to have myself when they are gone! Haha!
This pasta salad is so easy you won't believe it takes only minutes to put together. No processed dressings when you can make them better yourself right? And people can always tell the difference between homemade dressings and stuff you pick up from the shop.

Serves 6
Ingredients
250 grams penne pasta- dried
1/2 medium onion- finel chopped
1/2 medium red pepper- finely chopped
1 small carrot- peeled and grated
2 large pickles/ 1/2 cup- finely chopped
1 green onion stalk- chopped- just the greens
Dressing
1 cup mayonnaise
1/4 cup sour cream
2 tablespoons white vinegar
1 tablespoon dijon mustard
1 teaspoon sugar
1 teaspoon garlic- minced
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Boil the pasta until al-dente. Do not over cook the pasta. Drain and set it aside to cool completely.
Combine the ingredients for the dressing. Mix well.
Add the rest of the ingredients and mix well to coat the pasta in the dressing evenly.
Place in a bowl to serve. Cover with cling film and chill in the fridge until ready to serve.
