I love eating pasta salad in the summers. Actually I love eating pasta salad all year round. But pasta salad is great during BBQ season. A quick and easy table filler and it’s always a hit with everyone! This pepper pasta salad with chipotle lime dressing was a huge success with everyone this weekend. I served it alongside the burgers and hotdogs.Â
IngredientsÂ
Pasta saladÂ
400 grams dried pasta- boiled to al-denteÂ
2 cups broccoli- boiledÂ
1 red pepper- dicedÂ
1 yellow pepper- dicedÂ
1/2 red onion- slicedÂ
1 cup grated cheeseÂ
1/2 cup green onion- choppedÂ
1 cup sweetcorn- boiled and drainedÂ
1/2 cup tomatoes- choppedÂ
1/2 cup sun dried tomatoes- slicedÂ
1/2 seedless cucumberÂ
1/4 cup black olivesÂ
DressingÂ
1 teaspoon chipotle sauce/ favourite chilli sauceÂ
1 tablespoon lime juiceÂ
1/8 cup olive oilÂ
2 tablespoons vinegarÂ
2 tablespoons honeyÂ
1 tablespoons dijon mustardÂ
1/2 teaspoon dried basilÂ
1/2 teaspoon oreganoÂ
1/2 teaspoon dried parsleyÂ
1/2 teaspoon dried garlic powderÂ
Salt and pepperÂ
1/2 cup mayonnaiseÂ
InstructionsÂ
Combine the dressing ingredients. Mix well and set aside.Â
In a large bowl, combine all the pasta salad ingredients. Mix well.Â
Toss the salad in the dressing and adjust the seasoning.Â
