Make this delicious and quick pasta salad in a jiffy! With all the ingredients in your kitchen cupboard you don’t have any excuse NOT to make it this BBQ season. Serve it with your favourite BBQ dishes and remember this will be a salad that people will definitely talk about for ages!

Serves 6-8
Ingredients
2 cups fusilli pasta- cooked al-dente and drained
2 chicken breasts- boiled or grilled
1 green pepper- cubed
1/2 yellow pepper- cubed
1/2 orange pepper- cubed
1 tomato- cubed
1 green onion- sliced
1/2 onion- thinly sliced
3/4 cups mayonnaise
3 Tablespoons honey
3 Tablespoons mustard- dijon/american
salt and pepper – to taste
Instructions
1- Make the dressing: combine the mayonnaise, mustard, honey, salt and pepper. Mix well and set aside.
2- Chop the chicken into large chunks.
2- In a large bowl, combine the pasta, chopped chicken, tomato, peppers, spring onions and red onion.
3- Add the dressing to the salad and mix well until evenly mixed.
4- Refrigerate the salad for a couple hours until ready to serve.
