Honey Garlic Chicken

Week days and final exams with the kids has me running around like a headless chicken and the last thing I want to be doing is standing for hours in the kitchen making dinner. Also I didn’t want the kids to have take out when I can rustle something up in 20 minutes. This Honey garlic chicken was perfect for the kids. They went to bed with a full tummy, having has eaten something healthy and they really loved it.

Serves 4
Ingredients
2 large chicken breasts- butterflied
2 tablespoons corn starch
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoon oil
1 tablespoon butter
4 cloves garlic- minced
1/4 cup honey
1/3 cup chicken stock
1 tablespoon vinegar
1 tablespoon soy sauce
Corn starch slurry- 1 teaspoon corn starch mixed with 2 tablespoon water

Instructions
Combine the corn starch, salt and pepper. Mix well and dredge the chicken in the corn starch mix. Shake off any excess corn starch and set the chicken on a tray.
Heat the oil in a large pan and cook the chicken on both sides for 4-5 minutes until golden and crispy. Remove the chicken from the pan and place it on a plate.
Add the butter to the pan and once it is melted, sauté the garlic in the butter for 30 seconds. Turn down the heat and add the chicken stock, honey, soy sauce and vinegar. Mix the corn starch slurry into the sauce and cook it on a low heat until thickened.
Add the chicken back to the pan and coat the chicken in the sauce.
Serve with cilantro lime rice and steamed broccoli.
