I'm always on the hunt for easy and quick desserts. Sometimes I have to pull out a dessert with simple items. Because of the pandemic we can't always be choosy but dessert is always a necessity in my house. So I have been racking my brain trying to come up with simple ideas for dessert. Thats when I realised that these minimalist desserts are helpful to everyone because we are all in the same boat these days.
So this light, but delicious oreo mousse is the best dessert to start with.
Preparation Time 15 minutes
Serves 3-4
Ingredients
1 cup heavy cream- plus 1 tablespoon for ganache
12 oreo cookies - plus 2 for decoration
1 tablespoon butter
1/8 cup chocolate chips
Instructions
Place a large bowl and a hand mixer's beaters in the freezer for an hour.
Grind down the Oreos to fine crumbs. Place 3 tablespoons of the Oreos in a bowl for the bases. Set the rest aside.
Mix the melted butter with the 3 tablespoons oreo crumbs. Mix well. The texture will resemble wet sand.
Pour the crumbs into the bottom of 3 serving glasses. Press down the crumbs to create a uniform layer. you can use a rolling pin, spoon or even a silicon spatula.
Leave the base to set in the fridge until the mousse is ready.
Place 1 cup cream in the cold bowl and beat the cream until stiff peaks.
Fold the rest of the oreo crumbs into the cream.
Fill a piping bag with the mousse and pipe it into the glasses. Allow it to set in the fridge while making the ganache
For the ganache: combine the chocolate chips alongside the 1 tablespoon cream. Heat at 10 second bursts. Mix until smooth. Be careful not to burn the chocolate.
Pour the ganache over the mousse. Allow it to set in the fridge until ready to serve.
Decorate with oreo halves.
