Oreo Cheesecake

Attention all Oreo Lovers! This is the ultimate Cheesecake for you. A delicious and moist cheesecake stuffed with Oreos and topped with a thick chocolate ganache. What could be better than that?

Serves 6-8




Ingredients


Base


13 oreos

1/4 cup butter- melted


Filling


340 grams cream cheese

1/2 cup sugar

1/4 teaspoon salt

1 1/2 tablespoons flour

1/4 cup sour cream

2 eggs

1 teaspoon vanilla

6 chopped Oreos

6 crushed Oreos




Ganache


50 grams dark chocolate

25 grams double cream


Extras


4 Oreos- halved




Instructions


  1. Preheat the oven to 180c. Line a 7 inch springform cake pan with parchment paper and set aside.

  2. Crush 13 Oreos for the base until fine crumbs. Add the melted butter and mix until the mixture comes together.

  3. Press the mixture into the base of the springform cake pan.

  4. Bake the base for 5 minutes. Set aside to cool.

  5. In a large bowl, combine the cream cheese, sugar and salt. Mix until just combined.

  6. Add the flour and mix again.

  7. Add the sour cream, eggs and vanilla. Mix just enough to combine. Be careful not to over mix.

  8. Fold in the chopped Oreos and crushed Oreos.

  9. Pour the cheesecake mixture into the cake pan, and bake for 40-45 minutes, or until the middle is just set and no longer jiggly.

  10. For the ganache: heat the cream to a simmer. Pour over the chopped chocolate and cover with a plate. Leave for 5 minutes, then stir until smooth. If it isn't smooth, then you can always try the double boiler method, or even pop it in the microwave for 15 second bursts until smooth.

  11. Once the cheesecake is baked, cool in the pan and refrigerate for 4 hours until cold.

  12. Top with the ganache and set in the fridge once again until ready to serve.

  13. Garnish with extra Oreos.
