Keto Fudge Brownies

I have been on the search for some great keto brownies for ages and I think I've found them! They are so easy to make and take only 6 ingredients! Treat yourself with these rich and fudge brownies. Perfect for those nagging cravings.

Yields 16 squares






Ingredients


130 grams butter

160grams- 200 grams erythritol powder

60 grams cocoa powder

1/2 teaspoon salt

2 eggs- room temperature

70 grams almond flour




Instructions


  1. Preheat the oven to 180c/375f. Line an 8x8 inch square tin with parchment paper.

  2. Place the butter, erythritol, cocoa powder and salt in a heatproof bowl. Melt over a water bath whisking constantly. Heat up until the sweetener has melted. Please note that the erythritol will not melt completely. Remove the bowl from the heat and cool the mixture slightly.

  3. Add the eggs one at a time, mixing well until completely incorporated. The mixture will be smooth. Mix well until combined, but do not over mix. Overmixing will cause the brownies to be cake, instead of fudgy.

  4. Add the almond flour and mix vigorously for one minute until well combined.

  5. Bake for 17-22 minutes, depending on your oven. Check them after 15 minutes. An inserted skewer will come out with some fudgy crumbs on it. Brownies continue to cook as they cool, so it is better to leave them slightly under, than over baking them.

  6. Cut into 16 squares.
