The kids love to grab a muffin and run off to play with friends. And I love to feed people. So when I made a batch of these Nutella stuffed muffins, you can bet that the kids came running. Although muffins are so simple, they are adaptable and perfect when you only have a few ingredients. They don’t require much time to make and no need for equipment. All you need is a bowl and a large spoon to make muffins, which is why it’s perfect when you want to teach the kids to bake.Â

IngredientsÂ
1 3/4 cup/ 220 grams flourÂ
1 cup/ 200 grams sugarÂ
2 tablespoons cornstarchÂ
2 teaspoons baking powderÂ
1/2 teaspoon baking soda
1/2 teaspoon saltÂ
4 tablespoons/ 60 grams butter- meltedÂ
1/4 cup/ 60 grams vegetable oilÂ
1 egg- room temperatureÂ
1 teaspoon vanillaÂ
1 cup sour creamÂ
Filling and ToppingÂ
1/2 cup Nutella- for filling ans swirlingÂ
2 tablespoons granulated sugarÂ
1 teaspoon cinnamonÂ
InstructionsÂ
Preheat the oven to 210c. Line 12 hole muffin tin with cases. Set it aside.Â
In a large bowl, mix the flour, sugar, cornstarch, baking powder, baking soda and salt. Mix well and set them aside.Â
In a jug, whisk together the butter, vegetable oil, egg, vanilla and sour cream until smooth.Â
Fold the wet ingredients into the dry ingredients until a few pockets of dry ingredients remain.Â
Fill the liners half way to the top. Add a dollop of warm Nutella to the middle of each. Top with remaining batter until 7/8 the way full.Â
Mix the 2 tablespoons sugar and cinnamon together.Â
Top the muffins with a drizzle of Nutella. Sprinkle over the cinnamon sugar.Â
Bake the muffins at 200c for 5 minutes, then without opening the oven door, reduce the temperature to 180c and bake for a further 10-12 minutes.Â
Remove the muffins from the oven and cool them for 5 minutes before removing them from their pan. Set them aside to cool completely.Â
