Nutella is still a favourite among the kids. And as the school year was winding down, my kids had an end of year party after their exams. I made 100 cookies in 4 flavours. They were an instant hit. These Nutella stuffed red velvet cookies were one of the four flavours. It seems like the kids loved them a lot. I got a few calls from mother’s asking for the recipe. So as promised, the recipe for the Nutella stuffed red velvet cookies is here.

Yields 10 cookiesÂ
IngredientsÂ
1 1/4 cup flourÂ
1/3 cup cocoa powderÂ
1/2 cup butter- room temperatureÂ
1 egg- room temperatureÂ
1/2 cup brown sugarÂ
1/2 cup sugarÂ
1/2 teaspoon baking sodaÂ
1/2 teaspoon saltÂ
1 teaspoon vanillaÂ
1 teaspoon red gel food colourÂ
1/2 cup chocolate chipsÂ
3/4 cup NutellaÂ
InstructionsÂ
Preheat the oven to 180c. Line 2 baking sheets with parchment paper. Set them aside.Â
Cream the butter and sugars in a bowl for 3-4 minutes until light and fluffy.Â
Add the egg and vanilla. Mix well. Add the colour and mix it in again.Â
Fold the dry ingredients into the egg mixture until almost combined.Â
Fold the chocolate chips into the cookie dough. Chill the dough overnight.Â
Scoop teaspoons of the Nutella on a parchment lined tray. Freeze until solid.
Use 1/4 cup dough, create a flattened dough then add a frozen Nutella dollop. Close the dough back up and roll into a ball.Â
Place the cookie dough on the prepared trays, spacing them 2 inches apart.Â
Bake the cookies at 180c for 12 minutes until flattened, but still soft. Co not over bake them.Â
Let the cookies cool on the tray for 10 minutes before moving them to a cooling rack.Â
