When you have people coming over and don’t have any clue what to make, no bake mini cheesecakes work well. You can change the fillings at any point. Sometimes I’ll make a vanilla base, then change the toppings, with either coulis, fresh fruit or chocolate candies. They are so versatile.Â
I opened up my cupboard and found a jar of Nutella and some Oreos. And that was enough a sign to make these no bake mini Nutella cheesecakes.Â
Preparation Time 20 minutesÂ
Set Time 1 hourÂ
Yields 12Â
IngredientsÂ
BaseÂ
140 grams Oreos- crushedÂ
3 tablespoons butter - meltedÂ
CheesecakeÂ
250 grams cream cheese
3/4 cup NutellaÂ
1/4 cup heavy whipping creamÂ
1/2 cup sugarÂ
1/2 teaspoon vanillaÂ
Toppings
3/4 cup heavy creamÂ
2 tablespoons sugar
2 tablespoons NutellaÂ
3 OreosÂ
InstructionsÂ
Line muffin pan with liners, or use a silicon muffin pan.Â
Combine the cream cheese, Nutella and sugar together until smooth. Set it aside.Â
Beat the heavy whipping cream and vanilla until stiff peaks form.Â
Fold the whipped cream into the cheesecake mixture. Fold in 2 batches.Â
Pipe the cheesecake filling onto the bases. Tap the tray on the counter to release air bubbles and push the cheesecake filling down.Â
Freeze the cheesecakes for 1 hour.Â
Beat the 3/4 cup heavy cream with 2 tablespoons sugar until stiff peaks. Remove the cheesecake from the moulds.Â
Pipe the whipped cream on tops of the cheesecakes. Drizzle the Nutella over the whipped cream then garnish with Oreos.Â
Chill until ready to serve.Â
