When life is so busy and you don't get the time to prep and make a proper lunch for yourself? I've had those days and it is the worst. This halloumi pasta salad is perfect for this days. Prepare it while you work, and enjoy a delicious meal with your loved ones. The dressing is zingy and sweet, with pops of mint flavour. It's divine. You have to try this salad!

Serves 8 as a side
Ingredients
500 grams pasta- dried then boiled to al dente
200 grams/ 1 packet of halloumi- drained and cut into 1/4 inch thick slices
2 tablespoons Olive oil- to fry the halloumi
1/2 English cucumber- medium diced- half with skin on and the other without skin
2 tomatoes- diced
8 sun-dried tomatoes- sliced thinly
1 medium green pepper- diced
1/2 large onion- sliced
1 cup black olives- halved
Salt and pepper- as needed
Vinaigrette
1/3 cup vinegar
Juice and zest of 1 lemon
2 cloves garlic- minced
2 tablespoons honey
2/3 cup olive oil
1/4 cup fresh mint leaves
Salt and pepper- to taste
Instructions
Fry off the halloumi in the 2 tablespoons olive oil until golden and crispy. Remove it from the pan and cool. Cut into chunks.
Combine all the vinaigrette ingredients in a food processor. Blend until smooth. Set it aside until ready to serve.
Combine the remaining salad ingredients in a large bowl. Top with half the halloumi and half the dressing. Mix well.
Top with the remaining cheese just before serving.
