Break out of the normal routine and change things up a little with this Crunchy Thai Noodle Salad with Creamy Peanut Dressing. Its so easy to make and you can always change up the proteins and vegetables to suit your taste.




Crunchy thai noodle salad with creamy peanut dressing

Serves 6


Ingredients


150 grams noodles- boiled, drained and cooled

4 cups mixed vegetables- shredded red cabbage, shredded white cabbage, julienne carrots

1 cup broccoli - blanched

1 green pepper- sliced

3 spring onions- sliced

1/4 bunch coriander- chopped- optional

1/4 cup roasted peanuts- optional

Toasted sesame seeds- to garnish




Thai Peanut Dressing


1/4 cup creamy peanut butter

1 teaspoon minced ginger

1 clove of garlic- minced

1/4 cup fresh orange juice

3 tablespoons lemon juice

2 tablespoons soy sauce

3 tablespoons honey

3 tablespoon sesame oil

1/2 teaspoon cayenne pepper

1/2 teaspoon salt


2 grilled chicken breasts- sliced






Instructions


  1. Boil noodles until al-dente. Drain and set aside. Cool in cold water.

  2. Make the peanut sauce by combining all the ingredients and set it aside.

  3. Toss the vegetables, bell pepper, green onion and coriander. Add the noodles and chicken. Toss through then add the dressing. Toss it again.

  4. Garnish with toasted sesame seeds.

  5. Serve Chilled.
