Fresh Strawberry Cake

Last week I found a punnet of strawberries that were just the sweetest! The only thing I could think of making was a fresh strawberry cake. It was in my head since I had that first strawberry! All you need for this cake is a dollop of whipped cream! Thats it! Simple and sweet fresh strawberry cake! It will be the dessert highlight of the summer!

Preparation Time 15 minutes
Cook Time 1 hour and 10 minutes
Serves 8-10
Yield 9 inch cake
Ingredients
500 grams strawberries- halved and hulled
1 cup sugar
1/2 cup oil
2 eggs - room temperature
1 tablespoon lemon rind
1/4 cup fresh lemon juice
1 cup yogurt
1 teaspoon vanilla
2 1/4 cup flour
2 teaspoon baking powder
Pinch of salt
2 tablespoons sugar- for topping
Instructions
Preheat the oven to 180c. Line a 9 inch cake pan with parchment paper. Set it aside.
Mix the flour, baking powder and salt in a bowl. Mix well then set it aside.
Beat the oil and sugar together for 2 minutes until well combined. Add the eggs, one at a time, making sure one is well mixed in before adding the second. Stir in the vanilla.
Fold the flour and yogurt into the batter alternatively. Mix it in on a low speed until just combined. Be careful not to over mix the batter.
Transfer the batter to the lined cake pan. Smooth it over with a spatula.
Arrange the strawberries over the cake batter.
Sprinkle the remaining sugar over the strawberries.
Bake the cake at 180c for 10 minutes then reduce the temperature to 160 until cooked through. An inserted skewer will come out clean.
Serve the cake with whipped cream or custard or ice cream.
