The summer months means there should always be some chilled desserts, so we can cool off as we need to. This strawberry delight no bake dessert is so quick and easy to make, it’s perfect when it’s hot outside.

Ingredients
Base
1 cup crushed tea biscuits
2 tablespoons sugar
1/8 cup butter- melted
Filling
220 grams cream cheese
1 cup whipping cream- chilled and beaten to stiff peaks
1/2 teaspoon vanilla extract
1 cup powdered sugar
Topping
1 teaspoon corn starch
1 tablespoon water
3/4 cup sugar
1 cup strawberry puree
1 1/2 cup strawberries- sliced
Instructions
Combine the base ingredients. Mix well and press into an 8x8 inch pyrex dish.
Whisk the water and cornstarch together until smooth.
Place the puree, sugar and cornstarch slurry in a saucepan. Bring it to a simmer and cook on a medium heat for 2-3 minutes until a clear, deep red.
Set it aside to cool in a bowl.
Once cooled, fold in the strawberries.
For the filing, beat the cream cheese, sugar and vanilla until smooth. Fold in the whipped cream until JUST combined.
Spread it over the base. Smooth it over with an offset spatula. Chill 20 minutes.
Pour the strawberry mixture over the cheesecake filling and carefully spread it.
Chill the dessert for 4 hours.
