Creamy Dijon Chicken

There are some days when I do not want to spend hours in the kitchen, but everyone still expects a delicious dinner! This Creamy Dijon Chicken was perfect for one of those days. The chicken was tender and golden, and the creamy garlic, Dijon and Parmesan sauce was so good that we wanted to scrape the pan clean. I added spinach too, so that makes it healthy, right? Serve it with mashed potatoes, pasta or some crusty bread to soak up all that lovely sauce. It comes together in around 30 minutes and is perfect for a midweek family meal.

Serves 4
Ingredients
1 teaspoon Italian seasoning/ mixed herbs
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
½ teaspoon freshly ground black pepper
2 skinless chicken breasts
2 tablespoons olive oil
2 tablespoons butter
2 garlic cloves- minced
1 cup chicken stock
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
⅓ cup heavy cream
2 tablespoons grated Parmesan
2 cups spinach
Instructions
1. Combine the Italian seasoning, garlic powder, onion powder, salt and black pepper in a small bowl.
2. Cut each chicken breast horizontally in half to make four thinner pieces. Season the chicken on both sides with the prepared seasoning mixture.
3. Heat a large skillet over medium heat. Add the olive oil, followed by the chicken. Cook for approximately 4 minutes on each side, or until golden and cooked through. Remove the chicken from the pan and set aside.
4. Add the butter to the same pan. Once melted, add the minced garlic and sauté for 1 minute.
5. Pour in the chicken stock, then add the Dijon mustard and Worcestershire sauce. Stir everything together until well combined.
6. Add the heavy cream and grated Parmesan. Stir and simmer gently for 5 minutes, or until the sauce begins to thicken.
7. Taste the sauce and adjust the seasoning if needed.
8. Add the spinach and cook for approximately 2 minutes, or until wilted.
9. Return the chicken to the pan and spoon the creamy Dijon sauce over the top. Warm through before serving.
