One Pan Creamy Mushroom Chicken Legs and Thighs

Being a mum, full time content creator, baker and soccer mum, I feel like I am always being pulled in all directions all week. There are days when you don’t really want to make a blog post, YouTube video or picture perfect dinner. So I turn to those easy one pan dinner ideas that taste delicious and will still feed the hungry boys. This one pan creamy mushroom chicken legs and thighs were amazing! The flavours were bold and rich. Paired perfectly with a smooth mash and vegetables, you really can’t go wrong. The kids will love it and you’ll end a busy and rushed night full and satisfied. You have to make this now!

Serves 6-8
Ingredients
Chicken
8 skinless, bone in chicken legs and thighs
4 tablespoons cajun seasoning
2 tablespoons garlic powder
1 teaspoon salt
4 tablespoons olive oil
Sauce
2 tablespoons olive oil
2 tablespoons butter
1 medium onion- chopped
Salt and pepper- to taste
400 grams mushrooms- diced
2 cups chicken broth
1 cup heavy cream
Instructions
Coat the chicken in the cajun seasoning, garlic powder, salt and olive oil. Rub it all in and set it aside.
Heat 2 tablespoons oil in a large pan over a medium heat. Add the chicken legs and sear them for 3-4 minutes on each side.
Remove the chicken from the pan and set it aside.
Melt the butter in the same pan. Sauté the onion for 2-3 minutes until translucent. Add salt, pepper and the mushrooms. Cook them down for 5-6 minutes until the water dries and the mushrooms are cooked through.
Add the chicken broth and heavy cream. Add the chicken back to the pan. Cover and cook the sauce down for 10-15 minutes until thickened, and the chicken is cooked through.
Coat the chicken in that delicious sauce.
Remove the chicken from the pan. Serve the chicken with mashed potatoes and your favourite roasted vegetables.
