Creamy Chicken Melt Sandwich

These Creamy Chicken Melt Sandwiches are the kind of comfort food that always hits the spot. Juicy, spiced chicken is mixed with peppers, sweetcorn, spring onions, cream cheese and a little chilli sauce for a creamy filling with just the right amount of heat. Layer it between slices of bread with plenty of cheese, toast it in butter until golden and crunchy, and you have the perfect cheesy sandwich. Serve it with fries, coleslaw or even on its own for a quick lunch, weekend treat or easy family dinner.

Serves 4-6
Ingredients
Chicken
500 grams chicken breasts- butterflied
Salt- to taste
1/2 teaspoon chilli flakes
2 teaspoons lemon juice
1/2 teaspoon chilli powder
1/2 teaspoon paprika
1/2 teaspoon black pepper
1 teaspoon garlic powder
3 teaspoon oil
Filling
2 tablespoons green pepper- chopped
2 tablespoons yellow pepper/ red pepper - chopped
2 tablespoons spring onions- chopped
2 tablespoons sweetcorn
1 tablespoons mustard
1/4 cup mayonnaise
2 tablespoons sour cream/ milk
5 tablespoons cream cheese
2 teaspoons hot chilli sauce
Salt- to taste
1/2 teaspoon paprika
1/2 teaspoon black pepper
6 slices of bread- at least. You can even use 12 slices for this recipe depending on how much filling you use on each sandwich.
1 cup mozzarella cheese- shredded
2 slices cheese
Butter- as needed
Instructions
Marinate the chicken in the spices listed and set it aside for at least 30 minutes, or you can leave it overnight.
Heat the oil in a large pan and cook the chicken for 3-4 minutes each side until cooked through. Remove it from the pan and set it aside to cool. Chop the chicken into small pieces.
Prepare the filling: combine the chicken, all the vegetables, mustard, mayonnaise, milk/sour cream and cream cheese. Add spices and mix it all together.
Assemble the sandwiches: place 6 slices of bread on a chopping board spread the filling over 4 slices. Top 2 of those with a cheese slice and the other 2 with shredded mozzarella. Now close the sandwiches up so it’s a triple decker sandwich.
Melt some butter in a large pan. Toast the sandwich on all sides until golden and crunchy.
Slice and serve with fries and coleslaw.
