Homemade Sandwich Bread

This week has been so busy for me. The kids have finals and then the holidays begin. Early school pick ups mean that I don’t really have the abundance of time I usually get during the school week. Sunday morning I was able to get out a double batch of my homemade sandwich bread, then used it throughout the week for sandwiches. I love homemade sandwich bread because I can cut the bread to my own desired thickness. Also, homemade is always better, right?

Preparation Time 20 minutes
Proof Time 2 hours
Cook Time 30-40 minutes
Yields 1 loaf of bread
Ingredients
1 1/8 cups warm water
2 1/4 teaspoons yeast
2 tablespoons sugar
1/2 Tablespoon salt
2 tablespoons vegetable oil
2-3 cups flour
Optional: melted butter for brushing
Instructions
Combine the water, yeast and sugar in a bowl. Let the yeast bloom for 10 minutes
Add the oil, flour and salt. Mix to create a shaggy dough.
Knead the dough on a high speed for 5 minutes until a smooth dough forms.
Lightly grease a large bowl with oil. Place the dough in the bowl and cover with the oil in the bowl. Cover the bowl with a cloth and let it rise in a warm place for 1 hour or until doubled in size.
Once the dough has rise, dump the dough out onto the counter and shape it into a loaf.
Place it in a lightly greased loaf pan. Cover in a cloth and let it rise for 1 hour.
Preheat the oven the 180c. Bake the loaf for 30-40 minutes uncovered until risen and golden brown.
Remove the bread from the oven and brush the top with melted butter. This step is optional.
Cool the bread completely before cutting it into slices.
