Chicken Panini Sandwiches

When I was a kid, I didn’t like to eat the same thing every day at school. It would get boring and no one likes boring school lunches. So now that I am a mum, I don’t want the same for my kids. They get a different lunch at school every day. Last week I made panini bread rolls, so I decided to make some chicken panini sandwiches. I served it with crisps and a salad. It was a huge success! I will be doing this again!

Serves 6
Ingredients
500 grams chicken breasts- cubed
2 tablespoons oil
Juice of 1 lemon
1 tablespoon paprika
1/2 tablespoon dried parsley
1/2 tablespoon garlic powder
1/2 tablespoon onion powder
1-2 tablespoons peri peri seasoning
1 teaspoon salt
1 tablespoons honey
1 tablespoon tomato paste
1 onion- sliced
1 bell pepper- sliced
100 grams mushrooms- sliced
6 panini bread rolls- recipe here
1 cup shredded cheese
Peri peri sauce
Mayonnaise
Garlic butter
Instructions
Mix the oil, chicken, lemon juice and seasoning together in a large pan. Cook the chicken for 10 minutes until tender and slightly charred.
Remove the chicken from the pan and in the same pan, heat 1 tablespoon oil. Add the vegetables and sauté them until softened slightly. Remove them from the pan and set them aside too.
Slice the panini bread horizontally and place on a baking tray. Spread garlic butter over the bread. Grill 2 minutes until golden. Top one of the sides with mayonnaise, peri peri sauce, the sautéed vegetables, the chicken, shredded cheese and jalapeños. Top the jalapeños with the other half of the panini.
Brush the tops with garlic butter and bake in the oven for 5-6 minutes until the cheese melts. Serve immediately.
