Peri Peri Chicken Wraps

I like to make a batch of these peri peri chicken wraps for the boys to take to work and school. I serve them with potato wedges and coleslaw. The kids are happy and so is my husband. To make it more filling, add more salad, tortilla chips and salsa on the side. Let them cool before wrapping them in foil to prevent them from sweating and getting soggy. The boys love to take these wraps for lunch at school and work. And I am happy to make them whenever they ask.

Serves 4
Ingredients
1/2 kg chicken breasts- cut into strips
Seasoning
1/4 teaspoon cayenne
1 teaspoon cajun seasoning
1/2 teaspoon coriander powder
1/2 teaspoon oregano
1 teaspoon salt- to taste
1 teaspoon black pepper
1 teaspoon garlic powder
1 1/2 teaspoon paprika
1 teaspoon chilli powder
2 tablespoons ketchup
4 tablespoons peri peri sauce
2 tablespoons tomato paste
1 teaspoon garlic paste
2 onions- sliced
2 bell peppers- colourful and sliced
To Serve
Flour tortillas
Guacamole
Salsa
Sour cream
Shredded lettuce
Shredded cheese
Jalapeños
Instructions
Heat oil in a large pan. Add the chicken and all the seasoning. Fry the chicken until cooked through. Add the garlic and cook it for a further couple of minutes. Remove the chicken from the pan and place the pan back on the stove.
Add the vegetables and sauté for a couple minutes until the vegetables begin to wilt.
Add the chicken back to the pan along with the peri peri sauce, ketchup and tomato paste. Add more peri peri sauce if needed.
Remove it from the stove and fill the wraps as needed.
Transfer the wraps to a griddle and grill for a minute until golden and the cheese has melted inside.
