Chicken Shawarma Pizza

When the kids can’t decide what they want to eat then I have to come up with something that seems like a compromise. So this chicken shawarma pizza was a mix of pizza and chicken shawarma. When I say that it was a success was a huge understatement. They requested that I try a butter chicken pizza next, or even a chicken Alfredo pizza. Now how can I say no to that?

Cook Time 20 minutes
Serves 4-6
Ingredients
300 grams chicken breasts- sliced
1 teaspoon coriander powder
1 teaspoon garlic powder
1 teaspoon cumin powder
1 teaspoon paprika
1 teaspoon salt
Juice of 1 lemon
2 tablespoons yogurt
Red Sauce
1/4 teaspoon Turkish red chilli flakes
2 tablespoons tomato paste
2 tablespoons chilli sauce
Salt- to taste
3 cloves garlic
Olive oil
1/2 teaspoon paprika
1/2 teaspoon coriander powder
1 teaspoon water
1 teaspoon vinegar
Pizza Sauce
1 cup pizza sauce - recipe here
1/4 teaspoon coriander powder
1/4 teaspoon chilli flakes
1/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon garlic powder
White Sauce
1/2 cup greek yogurt
1/2 cup mayonnaise
A squeeze of lemon juice
Chopped parsley
1 teaspoon garlic paste
Salt- to taste
Pizza Dough
1 cup warm water
1 tablespoon sugar
1 tablespoon instant yeast
1 tablespoon olive oil
2 -2 1/2 cups flour
1 teaspoon salt
To Assemble
Sliced colourful peppers
Sliced jalapeños
6 cups shredded pizza cheese

Pizza dough
Chopped coriander- to garnish
Instructions
Combine the yeast, warm water and sugar in a mixer bowl. Mix well and set it aside to bloom for 10 minutes.
Add the olive oil, flour and salt. Knead the dough for 10 minutes until the dough pulls away from the sides of the bowl.
Set the dough aside in a warm place for 1 hour until doubled in size.
Divide the dough into 2 balls and roll out into pizza bases.
Set them on parchment lined pizza bases. Set aside until ready to assemble.
Mix the chicken, coriander powder, garlic powder, cumin powder, garlic powder, salt, lemon juice and yogurt all together. Set it aside to marinate 2 hours- overnight.
Blitz all the ingredients for the red sauce until smooth. Set it aside in a bowl for later.
Blitz all the ingredients for the white sauce until smooth. Set it aside in a bowl for later.
Combine all the ingredients for the Pizza sauce in a bowl. Mix well and set aside for later.
Cook the chicken in a pan with 2 tablespoons oil until cooked through. Set it aside to cool.
Roll out the pizza dough until thin. Top with the pizza sauce. Top with 1 cup shredded cheese. Top with chicken, sliced peppers, jalapeños and remaining 2 cups cheese.
Bake at 280c for 4 minutes on baking steel.
Brush the pizza with chicken juices and bake again for 4 minutes more until the top is golden and bubbly.
Top the pizza with sumac onions and coriander. Pipe on both the red sauce and white sauce. Serve immediately.
