Egg Mayonnaise Sandwiches

When I was a kid, this was one of the first sandwiches my mum taught me how to make. I love how delicious this simple sandwich is, it’s great for lunch, tea time or even picnics. The sandwiches should be kept in the fridge after you make them. Serve them with crisps or fries…… or even both. Its entirely up to you.

You have all the ingredients at home, so let’s get started.





Preparation time 15 minutes

Cook time 10 minutes for the eggs

Serves 2


Ingredients


2 Eggs- boiled and mashed

3 tbsp Mayonnaise

Small handful of Watercress- chopped

Salt and Pepper (to season)

4 slices of Bread

Butter for the bread



Instructions

  1. Place a pot of water on the stove. Put the eggs in the water and boil for 10 minutes. Start the time when the water begins to bubble vigorously.

  2. Remove the eggs from the stove and put them in ice water to stop the cooking process. Peel the eggs.

  3. Once the eggs have cooled, mash the eggs with a fork.

  4. Add the mayonnaise, chopped watercress, salt and pepper. Mix well until combined. Refrigerate for 20 minutes, or until cooled.

  5. Butter your bread.

  6. Spread the mixture onto one piece of the bread, then place another buttered slice on top.

  7. Cut the sandwiches into desired shapes. Which do you prefer? Triangles or squares?

  8. Serve with crisps or fries. It’s up to you.
