Subway's Italian Herb and Cheese Rolls

I love making my own bread and sandwiches are a need in this house with the kids going to school. And recently they have been off their normal sandwich options, so I decided to change things up by making my own subway Italian herb and cheese rolls at home. And the best part was, I was able to add their choice of fillings as I wanted for each child. Needless to say, they were very happy and the kids at school were very jealous!

Rise Time 1 hour 30 minutes
Cook Time 25 minutes
Yields 4 x 12 inch subway rolls
Ingredients
1 cup warm water
2 teaspoons instant yeast
1 tablespoon sugar/ honey
3 cups flour
2 tablespoons olive oil
1 egg
2 teaspoon salt
For Topping
2 teaspoons olive oil
1/4 cup cheddar cheese- shredded
1/4 cup parmesan cheese- shredded
1 teaspoon Italian seasoning
Instructions
Combine the water, yeast and sugar in a mixing bowl. Mix well and set aside for 10 minutes to bloom.
Add the flour, olive oil, egg and salt. Knead it on a high speed for 10 minutes.
Transfer the dough to an oiled bowl. Cover with clingfilm and allow to rise in a warm place for 1 hour until doubled in size.
Cut the dough into 4 equal parts and shape by rolling the dough out into a rectangle, rolling into a baguette shape and then pinching the ends shut. Place the rolls seam side down on a parchment lined baking sheet.
Cover the baguettes with clingfilm and leave to rise in a warm place for 30 minutes.
Score the tops with a sharp knife.
Brush the tops with olive oil, top with Italian seasoning, cheddar and parmesan cheese.
Bake the rolls at 180c for 15-20 minutes until the internal temperature of the buns is 165c.
Remove them from the oven and allow them to cool for 10-15 minutes before slicing and serving
