Spicy Chicken and Vegetable Macaroni

Sometimes you don't want to stand at the stove after a long day and cook dinner that you know the kids will complain about anyway. So I came up with this delicious spicy chicken and vegetable macaroni, that your little ones will fall in love with.











Preparation Time 15 minutes

Cook Time 20 minutes

Serves 4-6


Ingredients


2 cups dry pasta

Salt for pasta

1 tablespoon vegetable oil

1 teaspoon vegetable oil

2 cloves garlic- minced

1 chicken breast- finely chopped

1 large onion- finely chopped

2 tomatoes- finely chopped

salt - to taste

1 small carrot- finely chopped

1/2 green capsicum- finely chopped

1/2 teaspoon chilli powder

1/2 teaspoon garam masala powder

2 Tablespoon tomato sauce

1 Tablespoon chilli sauce

1/4 teaspoon white pepper


Coriander for garnish











Instructions


  1. Boil the pasta in generously salted and oiled water until al-dente. Strain in a colander and set aside.

  2. Fry off the chicken in 1 teaspoon vegetable oil.

  3. Add the chopped onions and minced garlic. Sauté on a low heat for 2 minutes, until the onions are translucent.

  4. Add the tomatoes and salt to taste. Mix well and sauté for 2 minutes.

  5. Add the carrots and capsicum and cook on a low heat for 3-5 minutes.

  6. When the vegetables have wilted slightly, add the chilli powder and garam masala powder. Mix well.

  7. Pour in the tomato sauce and chilli sauce. Mix to coat the vegetables.
