Shish Tawook

This is the easiest make ahead recipe. I love recipes where I can marinate the meat the day before. The marination process yields so much flavour and makes for some delicious dinners. This is perfect for those days when I don't have much time but I still want to make a great dinner!






Preparation Time 10 minutes - plus 8 hour marination time

Cook Time 20 minutes

Serves 6-8 people


Ingredients


1 kg chicken breasts/ chicken thighs- in medium sized cubes

1/2 cup yogurt

1/4 cup lemon juice

1/4 cup olive oil

6 cloves of garlic- minced

1 tablespoon tomato paste

1 teaspoon paprika

1 teaspoon cinnamon

1/2 teaspoon oregano

1/2 teaspoon ginger paste

1 teaspoon salt

1/4 teaspoon black pepper






Instructions


  1. Combine all the marinade ingredients in a bowl. Whisk to combine.

  2. Add the chicken and mix well.

  3. Cover with clingfilm and marinate for 6-8 hours. Overnight is always better.

  4. Soak bamboo skewers in water for 15 minutes.

  5. Thread the chicken onto the skewers.

  6. Heat up the griddle and lightly oil with vegetable oil.

  7. Grill the chicken on each side for 5-8 minutes until tender and cooked through.

  8. Serve with hummus, falafel, baba ganoush and shawarma bread.
