One Bowl Chocolate Cake

There are days when I haven't got the time to go all fancy and spent hours making and decorating a cake! Sometimes you need something quick that hits all the spots and makes you feel all happy and good inside. And who wants to wash loads and loads of dishes? Not me for sure! If I can skip all those steps I'm a really happy mummy! ha!


This One Bowl Chocolate Cake is perfect. It ticks all the boxes, its super quick, tastes yummy and satisfies all my chocolate cravings. My kids go crazy over it and because they eat this cake by the plateful, I do not add any coffee to this recipe. But if you don't have kids you can always add a couple tablespoons of brewed coffee to the batter too.


The frosting is also a one bowl recipe too. Trust me, it doesn't get better than this. A rich and delicious frosting, which my kids lick off the spatula if there are any leftovers.







Preparation Time 10 minutes

Cook Time 30 minutes

Serves 8-10


Ingredients


1 cup all purpose flour

1 cup sugar

1/4 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 egg

1/2 teaspoon vanilla

1/2 cup oil

1/2 cup sour cream/ buttermilk/ yogurt

1/2 cup hot water


Frosting


1/4 cup butter

4 tablespoons unsweetened cocoa powder

3 tablespoons sour cream

1 1/2 cups icing sugar

1/2 teaspoon vanilla






Instructions


  1. Line an 8x8 inch square baking pan with parchment. Set it aside

  2. Preheat the oven to 180c.

  3. In a bowl combine: flour, sugar, cocoa powder, baking soda, baking powder and salt. Whisk it well.

  4. Add the egg, oil, sour cream and vanilla. Beat until smooth. Mix wet ingredients into the dry ingredients. Add the hot water and whisk until smooth.

  5. Pour the batter into the prepared pan.

  6. Bake at 180c for 25-30 minutes.

  7. Cool the cake completely before frosting.

  8. To make the frosting: melt the butter, add the cocoa powder and sour cream. Mix it through and place it in the microwave for 10 seconds. Add the icing sugar and whisk it through. Add the vanilla and mix again. Let the frosting cool 10-15 minutes. Frost the cake and let it cool to set.
