Pulled Chicken Sandwiches

Last week I shared my recipe for soft dinner rolls. The same day as I made those, I used them to make my pulled chicken sandwiches. The kids took them to school after a bbq we had at our house. They have ben requested by 2 friends to be sent to school again and that makes me very happy.
You can always switch things up and change the recipe for add your favourite meats, like beef instead of chicken or even change up the coleslaw to your preference. But this recipe is definitely a keeper. These pulled chicken sandwiches are best served with more of that fresh coleslaw and potato wedges.

Serves 6
Ingredients
Pulled Chicken
1 kg chicken breasts
1/2 onion- sliced
1/2 tablespoon garlic paste
2 tablespoons cajun seasoning
1 cup chicken stock
1 tablespoon brown sugar
Coleslaw
1/4 head red cabbage- shredded
1/4 head green cabbage- shredded
1/4 medium onion- sliced
1 1/2 tablespoons vinegar
1/2 cup mayonnaise
1 tablespoon sugar
Salt and pepper- to taste
1/2 cup- 3/4 cup bbq sauce (my recipe is here)
Instructions
Preheat the oven to 200c. Spread the onions and garlic in a roasting pan. Pour the stock over the top of the onions. Set it aside.
Combine the sugar and cajun seasoning in a bowl. Mix well and rub the seasoning all over the chicken. Set the chicken over the onions. Cover with foil and bake at 180c for 1 hour.
Remove the chicken from the oven and shred it. Put it back in the same roasting pan. Add the bbq sauce and mix it in. Set the chicken aside.
Make the coleslaw and toast the buns.
Fill the buns with the chicken, coleslaw and serve the pulled chicken sandwiches with fries or potato wedges.
