Mint Margarita

The summer is here! And you all know what that means! Cold drinks with those little umbrellas. Well that's how my boys drink 'em which is why I will be serving them this way all summer. A favourite in our house is the Mint Margarita. What makes it even better is that the mint is plucked straight from our garden. The kids love picking the mint and bring it to me when they want drinks. Doesn't get better than that, does it?


This drink is so refreshing and helps to digest food after a really heavy meal. You will thank me later. It takes minutes to bring it together, so prepare to enjoy those summer days a little more with this delicious Mint Margarita.






Preparation Time 2-3 minutes

Serves 2


Ingredients


1/2 Cup Sugar

1/2 Cup Water

1/4 tsp Salt

6-8 Sprigs of Mint (or More)

3 Lemons (Juice)

3-4 Cups Ice cubes

1 Cup 7up Lime or Sprite (250ml)


Garnish


lemon slices

3-4 sprigs of mint



Instructions


  1. Combine the water, sugar, salt and lemon juice. Blitz until well combined.

  2. Add the ice and sprite. Blitz again until the ice is crushed and the ingredients come together.

  3. Pour into 2 glasses. Garnish with the lemon slices and mint sprigs. Serve immediately.
