Cornflake Brownies 

These cornflake brownies were a mixture of two yummy desserts: cornflake tart and fudge brownies! You won’t believe how much I love desserts that are a combination of 2 or 3 different desserts. These cornflake brownies were sticky, crunchy and fudge like.

Preparation Time 20 minutes 

Cook Time 35-40 minutes 

Chill Time 4 hours- overnight 

Serves 12 



Ingredients 


Brownie Layer 


225 grams butter 

140 grams dark chocolate 

5 eggs 

180 grams brown sugar 

180 grams sugar 

100 grams flour 

50 grams cocoa powder 

1/4 teaspoon salt 



Cornflake Layer 


480 grams sugar 

150 grams butter- room temperature 

300 ml heavy cream 

1 teaspoon salt 

220 grams cornflakes 





Instructions 


  1. Preheat the oven to 180c. Line and grease a 9x13 inch pan with parchment paper. 

  2. Brownie Layer: In a pot, add the butter and chocolate. Place it over a medium heat until melted and smooth. Set it aside to cool. 

  3. In a large bowl, beat the eggs and sugars together until light, fluffy and doubled in volume. 

  4. Pour the cooled chocolate into the egg mixture and mix it in. 

  5. Add the flour, cocoa powder and salt. Mix it in until smooth 

  6. Pour the batter into the prepared base. Bake at 180c for 35-40 minutes until an inserted toothpick only has a few crumbs on it. Set it aside. 

  7. Cornflake layer: In a non stick pot with high sides, add 1/4 of the sugar. Place it over a medium heat. Stir until the sugar begins to melt. And 1/4 more of the sugar and melt it through again. Keep doing this until all the sugar is melted. Constantly stir to prevent the sugar from burning. 

  8. Once all the sugar is melted, cook it on a low heat until it is a deep amber colour. 

  9. Take it off the heat. Add half the butter. Mix it in and then add the other half of the butter. Mix it in again. Slowly add the cream and whisk until smooth. 

  10. Place the caramel back on the stove and cook it for 2 minutes until it begins to thicken. 

  11. Take it off the heat, mix in the salt and then add the cornflakes. 

  12. Put the layers together. Once the brownie layer is baked, cool it for 10 minutes, then add the cornflake layer over the brownies and smooth it out. 

  13. Chill the brownies in the fridge for 2-4 hours or even overnight. 

  14. Cut it into squares and serve.
