These fudgy molten chocolate kava cakes use only 7 ingredients and come together in 20 minutes. They look super sophisticated. Perfect for one of those dinner parties you have been saving recipes for. This will become a keeper. Prepared in ramekins and then inverted before serving.
This recipe reminds me of the chocolate molten lava cakes from Chilli's. And to be honest this recipe was inspired by my sister, Aasiya, who missed their molten lava cakes during the lockdown. And I miss having dinner with her and hanging out. Laughing and teasing each other over dessert. She's the perfect little sister. And I wouldn't be the sister I am without her. But after getting married I moved away and miss her every day. When I made this recipe, she was the first person I thought of. And will be the one I think about every time I make it from now on.
Preparation Time 15 minutes
Cook Time 6-10 minutes
1/2 cup butter - softened plus extra for greasing ramekins
170 grams unsweetened chocolate
2 egg yolks
1/4 cup sugar
a pinch of salt
2 Tablespoons flour
Preheat the oven to 220c / 425f
Grease the ramekins with butter and dust with flour.
Melt the chocolate and butter in a double boiler. Whisk until smooth. Cool the mixture slightly.
In a medium bowl, beat the eggs, yolks, sugar and salt until thickened and pale.
Fold in the cooled chocolate mixture and flour into the egg mixture.
Pour the batter into the ramekins and bake at 450f for 6-8 minutes.
Let the cakes cool for a minute, then invert and let stand 15 seconds then unmould.
Top with sifted powdered sugar and garnish with fresh berries.
