If there’s one sauce I always like to have in the fridge, it’s this chipotle aioli. It’s creamy, smoky, just the right amount of spicy, and instantly makes even the simplest meals taste so much better. Whether I’m serving it with crispy potato wedges, burgers, sandwiches, or wraps, it’s one of those sauces that disappears so quickly because everyone keeps going back for more.
The best part is that it comes together in just a few minutes with simple ingredients and packs so much flavour. It has the perfect balance of creaminess, smokiness, tang, and a gentle kick of heat without being overpowering. Once you make it from scratch, you'll find yourself reaching for it again and again.

Ingredients
2 tablespoons chipotle sauce
2 teaspoons lime juice
1 cup mayonnaise
1 tablespoon fresh coriander- chopped
¼ teaspoon salt
¼ teaspoon black pepper
Instructions
Add the chipotle sauce, lime juice, mayonnaise, chopped coriander, salt, and black pepper to a medium bowl.
Mix everything together until smooth and well combined.
Cover and chill in the refrigerator for 30 minutes before serving to allow the flavours to develop.
Notes
Use more or less chipotle sauce depending on how spicy you like it.
Fresh lime juice gives the best flavour.
Store any leftovers in an airtight container in the refrigerator for up to 3–4 days.
