You all know me by now, I am always making quick recipes but filled with flavour. I try to make food that is healthy for the kids and will try to add as many vegetables in them as possible so that they are getting lots of nutrients. This chicken lo mein was great. A quick and easy 15 minute dinner idea that everyone in the family can enjoy. If you prefer not to add meat, you can make it in even less time. EVEN BETTER!Â

Serves 4Â
IngredientsÂ
1 1/2 tablespoons oilÂ
2 cloves galic- mincedÂ
1/2 onion- slicedÂ
300 grams chicken- slicedÂ
2 medium carrots- cut into matchsticksÂ
200 grams mushrooms- slicedÂ
6 green onions- cut into 2 inch batonsÂ
1 green/ red pepper- slicedÂ
500 grams lo mein/ medium thickness egg noodles- cooked according to packet
1/4 cup waterÂ
SauceÂ
4 teaspoons corn starchÂ
4 tablespoons soy sauceÂ
4 tablespoons oyster sauceÂ
1 tablespoon honeyÂ
1/2 teaspoon sesame oilÂ
1/4 teaspoon black pepper
Green onion- to garnishÂ
InstructionsÂ
Sauce: mix the ingredients together and set it aside.Â
Season chicken: transfer 2 tablespoons of the sauce in the bowl with the chicken. Mix well coat the chicken in the sauce.Â
Heat the oil in a wok until smoking. Add the onion and garlic. Sauté for 30 seconds. Add then chicken and cook for 1 minute on high heat.Â
Add the carrots, peppers, mushrooms and cook for 2-3 minutes.Â
Add noodles, sauce and water. Use 2 wooden spoons to help toss the noodles in the sauce. Cook on high for 30 seconds.Â
Add green onions and toss it all in.Â
Serve immediately and garnish with green onion
