This week I have been so busy, with guests and with one of the kids poorly, I haven’t wanted to make anything too complicated. So I decided to make this chicken Alfredo garlic bread. It was a huge hit with the kids and my husband really enjoyed it. He didn’t believe me when I said it took me 20 minutes to make this. Which is why I love this recipe so much. The kids were full and happy, hubby happy and I was relaxed.

Cook Time 15 minutes
Serves 4
Ingredients
1 loaf French bread
3 chicken breasts
2 teaspoons cajun spice
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 teaspoon oil
Sauce
1 cup heavy cream
Salt and pepper- to taste
1/4 teaspoon garlic powder
1/4 cup chicken stock
50 grams cream cheese
2 cups shredded cheddar cheese- divided
Garlic Butter
1/4 cup butter
1/2 teaspoon garlic paste
1/8 teaspoon salt
1/2 teaspoon black pepper
Instructions
Marinate the chicken in oil, cajun spice, salt, pepper and garlic powder. Mix well and set aside for 15 minutes.
Grill the chicken for 4-5 minutes on each side. Remove them from the pan and allow the chicken to rest for 5 minutes, then slice them.
In the same pan, add the heavy cream, salt, pepper, garlic powder and chicken stock. Mxi well
Slowly add the cheddar cheese. Then add the cream cheese and mix it all in until smooth. Adjust the seasoning.
Combine all the ingredients for the garlic butter and set them aside.
Slice the French bread horizontally. Spread the garlic butter over the bread. Top the butter with 1/2 cup of shredded cheese, then the sliced chicken, more cheese and some of the sauce. Reserve sone of the sauce for when you are ready to serve.
Grill the chicken Alfredo bread for 5-6 minutes until golden and the cheese bubbles.
Serve with the Alfredo sauce as the dipping sauce.
