My mum makes this amazing olive bread, that is lactose free and tastes so perfect, just toasted with a thick smear of butter on it. I cannot imagine anything better for an easy snack. But this cheesy olive garlic bread is great as a side to soups or even a huge plate of pasta.
This recipe is so easy to make and comes together in minutes. All you need is a large loaf of crusty bread.

Ingredients
1 large crusty loaf of uncut bread
150 grams black olives- drained and chopped
150 grams green olives- drained and chopped
2 stalks green onion- chopped
1/2 cup butter- room temperature
1/2 cup mayonnaise
300 grams mozzarella cheese- grated and divided
3 cloves garlic- minced
1/4 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon chilli flakes

Instructions
Preheat the oven to 190c.
Cut the bread horizontally and place eon a chopping board.
Combine the butter, mayonnaise, olives, onions, 150 grams cheese, garlic, salt, pepper and chilli flakes in a bowl. Mix well until well combined.
Spread the mixture over both halves of the bread.
Top with the remaining 150 grams of grated cheese.
Bake at 190c for 20-25 minutes until golden and crispy.
