Banana Caramel Pudding Dessert
A banana caramel pudding dessert that needs no baking and comes together in about 15 minutes - my kind of dessert! You start with a buttery rich tea biscuit base, layer it up with sweet sliced bananas and a drizzle of salted caramel, then spoon over a creamy vanilla custard and finish it with a cloud of cinnamon whipped cream.
It sits in the fridge for three hours and comes out looking like you spent all day on it, but honestly the hardest part is waiting. It is the sort of pudding that disappears at family dinners - I make mine in an 8 inch pyrex dish and there is rarely any left for the next day.

Ingredients
1 1/2 cups cold heavy whipping cream
1 cup vanilla custard
1 tablespoon condensed milk
1 cup rich tea biscuit crumbs
1/8 cup butter- melted
4 ripe bananas - sliced
2 tablespoons salted caramel
1/2 teaspoon cinnamon
Extra Topping
The reserved crumbs
1 sliced banana
1 tablespoon salted caramel
2 rich tea biscuits- quartered
Instructions
1. Beat 1/2 cup of the cold whipping cream until soft peaks form. Fold in the vanilla custard and condensed milk, then set it aside for later.
2. For the base, combine the rich tea biscuit crumbs and the melted butter and mix well - the mixture should look like wet sand. Reserve 2 tablespoons of the mixture for the garnish later, then press the rest into the base of an 8 inch pyrex dish.
3. Top with the sliced bananas, then drizzle over the salted caramel. Spoon the vanilla cream over the top and chill the dish until you are ready to add the whipped cream.
4. Beat the remaining 1 cup of heavy whipping cream with the cinnamon until stiff peaks form, then spread it over the vanilla cream. Chill for 3 hours.
5. Just before serving, top with the extra banana slices, the remaining salted caramel, the reserved biscuit crumbs and the quartered rich tea biscuits.
