There have been days this month where quick dinners have become a norm. Mainly because I was just swamped with work on my other channel and Ramadan, so I wanted to find a few recipes that would be easy to make, that the kids can warm up themselves and they will actually enjoy. So we are Pakistani, but for some reason, my kids don’t really enjoy eating Pakistani food every day. Which is totally fine because I don’t like eating it every day either.Â

Serves 4Â
IngredientsÂ
Chicken
400 grams chicken breasts- cubedÂ
1/2 teaspoon chilli powderÂ
1/8 teaspoon turmericÂ
1 teaspoon coriander powderÂ
2 teaspoon paprikaÂ
1 teaspoon cuminÂ
1 teaspoon garam masalaÂ
1 heaped tablespoon greek yogurtÂ
1 tablespoon tomato pureeÂ
1 tablespoon garlic pasteÂ
1 tablespoon ginger pasteÂ
Salt and pepperÂ
1 teaspoon oilÂ
Juice of 1 lemonÂ
A couple drops of Red food colour
RiceÂ
1 green pepper- cubedÂ
3 spring onions- slicedÂ
1 cup rice- washed and soaked for 30 minutesÂ
1 tablespoon oilÂ
1/2 teaspoon paprikaÂ
1/2 teaspoon black pepperÂ
1 1/2 cups chicken stockÂ
Mint and Lime YogurtÂ
2 heaped tablespoons greek yogurtÂ
Juice of 1 lemonÂ
Chopped mintÂ
Salt and pepperÂ
InstructionsÂ
Marinate the chicken in the above spices and ingredients. Set it aside for 30 minutes- 4 hours.Â
For the rice: sauté the spring onions and green pepper in oil for 3-4 minutes. Add the paprika and pepper. Sauté for a minute more. Add the chicken stock and taste for salt.Â
Bring it to a boil and add the rice. Cover and cook on a low heat until the stock is absorbed in the rice. Once the water is absorbed, steam the rice for 10 minutes until fluffy. Set them asideÂ
Soak 8 wooden skewers in water then thread the chicken onto the skewers.Â
Grill the chicken for 3-4 minutes until golden and cooked through.Â
For the mint and lime yogurt: combine all the ingredients and chill until ready to serve. Â
