I have been seeing these viral olympic muffins all over my feeds over the past couple of weeks and here I am thinking ‘why am I not a part of this????’ I love muffins! And I love ganache! So I’m going to share my recipe for these Viral Olympic Muffins with you!Â

Yields 12 large muffinsÂ
IngredientsÂ
MuffinsÂ
2 cups flourÂ
1 cup sugarÂ
1/2 cup cocoa powderÂ
1 teaspoon baking sodaÂ
1 cup chocolate chipsÂ
2 eggsÂ
1 1/2 cups sour creamÂ
1 cup oilÂ
1 teaspoon vanillaÂ
GanacheÂ
1/2 cup heavy creamÂ
1 cup chocolate chipsÂ
InstructionsÂ
Preheat the oven to 180c. Line muffin tins with cases/ grease with oil. Set the pan aside.Â
Whisk the eggs, oil, sour cream and vanilla together until smooth. Set it aside.Â
Combine the dry ingredients in a large bowl. Whisk well.Â
Add the chocolate chips and mix them into the dry ingredients.Â
Fold the wet ingredients into the dry ingredients until JUST combined. Do not over mix the batter.Â
Fill the cases until three quarters filled.Â
Bake the muffins at 180c for 20 minutes, until an inserted toothpick comes out clean.Â
While the muffins bake, make the ganache by combining the cream and chocolate in a bowl. Heat at 30 second intervals in the microwave until the ganache is smooth. Set it aside to cool.Â
Once the muffins are cooled, use a piping tip to make a cavity in the middle of the muffins. Fill the cavity with the chocolate ganache.Â
Serve immediately.Â
