Three Milk Cake | Tres Leches Cake

We all need a recipe for the classics right? A classic victory sponge, chocolate fudge cake, chocolate chip cookie, or even the humble sugar cookie. I feel like everyone should also have a go to three milk cake recipe too. This tres leches cake is so easy to follow, quick to make and tastes incredible. It’s a perfect recipe for beginner bakers too. Top the whipped cream with a sprinkle of cinnamon and some fresh sliced strawberries.

Preparation Time 15 minutes 

Bake Time 20 minutes 

Chill Time 3 hours 

Serves


Ingredients


3 eggs- room temperature 

1 teaspoon vanilla 

Pinch of salt 

1/3 cup sugar 

1/8 cup oil 

1 cup flour 

1/2 teaspoon baking powder 



Milk Mixture 


3/4 cup evaporated milk 

1/3 cup heavy cream 

1/4 cup condensed milk 


2 cups whipped cream- chilled

Sliced strawberries- to serve 




Instructions 


  1. Beat the eggs, vanilla, sugar and salt on a high speed for 7-8 minutes until light and foamy. It should be doubled in volume. 

  2. Add the oil and mix it in. Fold in the flour and baking powder. Be careful not to push any of that air out of the batter. 

  3. Pour the cake batter into a lined 8 inch square pan. Bake the cake at 180c for 20 minutes. 

  4. Cool the cake completely and then poke the cake with a skewer. 

  5. Combine the ingredients for the milk mixture. Pour the milk over the cake. Chill for 30 minutes. Once the milk is absorbed, spread over the whipped cream. Chill the cake for 2 hours then serve.
