Matilda Chocolate Cake

We’ve all seen the movie Matilda. And that iconic scene when Bruce Bogtrotter eats the chocolate cake is just everything!! My kids always drool over the cake until they see Bruce scoff it down. The kids wanted me to recreate the cake for them with a thick layer of fudge frosting that they could lick with their fingers! Once they had a bite my older one said ‘now I understand why Bruce was eating the cake with his hands and why he ended up eating it all!’ Mmhm.... This cake is that amazing!

Cook Time 20 minutes
Chill Time 3 hours
Yields 14 slices / 2x8 inch cake
Ingredients
2 1/2 cup flour
1 3/4 cup sugar
2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup cocoa powder- sifted
2/3 cup oil
1 teaspoon vanilla
3 eggs- room temperature
2/3 cup buttermilk
1 cup hot coffee
Fudge Frosting
150 grams butter
200 grams dark chocolate
14 grams cocoa powder
150 grams heavy cream
80 grams icing sugar
1 gram salt
1 teaspoon vanilla
Instructions
Preheat the oven to 180c. Line 2 8 inch cake pans with parchment paper and set them aside.
For the cake: In a bowl combine the flour, sugar, salt, baking powder, baking soda and cocoa powder. Mix well.
Add the buttermilk, oil, vanilla and eggs. Mix well. Mix the hot coffee into the batter.
Divide the batter between the 2 pans. Bake them at 180c for 20-22 minutes.
Remove the cakes from the oven and cool them completely, the remove them from the pans.
Make the frosting: combine all the ingredients in a saucepan. Heat it over a low heat until just melted and well combined.
Pour the frosting in a bowl. Cover the surface with cling film. Cool it completely. Chill the frosting for 2-3 hours.
Assemble the cake with the frosting. Serve immediately.
