2 cups of pasta- boiled to al-dente
2 chicken breasts- grilled and cut into chunks
1 capsicum- in chunks
2 tomatoes- in chunks
1/2 onion- sliced
1/3 cup mayonnaise
2 tablespoons olive oil
1 teaspoon vinegar
2 teaspoons cajun spice
1 teaspoon paprika
1/2 teaspoon black pepper
salt- to taste
Combine all the ingredients for the dressing. Set it aside.
In a large bowl: combine the pasta, green pepper, tomatoes, chicken, onion and dressing. Mix well.
Adjust the seasoning as needed.
